Welcome to my kitchen! If there's one secret that unites all Italian families, it's the scent of beef broth simmering slowly on the stove. Today, I want to reveal this fundamental pillar of our culinary tradition to you. Whether you use it as the base for a perfect risotto or enjoy it alone as a warm comfort food, homemade broth completely transforms every dish. No matter where you are in the world: with simple ingredients and the right timing, you can bring the authentic flavor of Italy to the table. Are you ready?

Ingredients:

  • 3 liters of water
  • 400g of beef rib
  • 400g of beef shoulder
  • 180g of onion
  • 180g of carrots
  • 180g of celery
  • 2 bay leaves
  • 4 peppercorns
  • 4 cloves

Preparation:

Cutting vegetables

After cleaning the vegetables, 1 Cut the celery into large pieces, 2 Do the same with the carrots, and cut the onion in half with the peel. 3 Finally, brown it a little on the bottom of the pan.

Start cooking
Deglaze by pouring in a little water, 4 add the rest of the ingredients, and 5 pour in all the water, seasoning it lightly. Bring to a simmer, covering with a lid, and 6 occasionally skim off the foam on the surface with a slotted spoon.

7 After at least two and a half hours 8 remove the broth from the heat and drain the vegetables and meat with a slotted spoon. Then 9 strain the broth through a sieve and consume it immediately or store it in airtight containers.

Advise

  • Onion : if you want a clearer broth, add the unpeeled onion.
  • Clarity : If you want a clear broth, add a cheesecloth to the strainer to filter it finely.
  • Storage : the most practical thing is to divide it into closed trays and store it in the freezer and defrost it when needed.
