Pasta with anchovies and courgette flowers

With this recipe I will take you to discover a dish that combines bold and delicate flavors: pasta with anchovies and courgette flowers. This recipe is a hymn to simplicity and authentic taste, perfect for a quick but unforgettable dinner. I will show you how to create a perfect balance between the saltiness of the anchovies and the sweetness of the courgette flowers, giving you a truly special gastronomic experience.

Ingredients:

  • 250g pasta
  • 50g sardines/anchovies
  • 2 cloves garlic
  • 1 chilli pepper (optional)
  • 6 courgette flowers
  • olive oil to taste
  • coarse salt to taste

Preparing the ingredients

Boil a pot of water for the pasta. When the water boils, add salt and 1 pour in the pasta. While the pasta is cooking, 2 chop the chili pepper with a knife. After removing the bottom of the courgette flowers, stack them on top of each other and 3 cut them lengthwise into strips and then make a cut in half to halve their length.

Sautéing and stirring

4 Pour the oil into a pan, add the crushed garlic cloves and the chopped chili pepper. Fry everything together for a few minutes over medium heat, breaking up the anchovies. Remove the garlic and, when the pasta is ready, 5 toss it in the pan with the soffritto. Then 6 add the chopped basil leaves and the courgette flowers.

Final stirring

7 If necessary, you can add a little cooking water and 8 toss the pasta in the pan to slightly wilt the vegetables. Finally, add a little grated parmesan 9 and give it a final toss in the pan. Serve while still piping hot and enjoy!

Advise

  • Mix the flowers : when you sauté the flowers in the pan with the pasta you can add a little cooking water to better mix them with the other ingredients.
  • Dissolve the anchovies well : while you heat them in the pan, chop them well and let them dissolve in the oil so that they will flavor your pasta evenly.
